I woke up to this…
And came home from work to this….
I’m not even sure how the tradition started, but Tuesdays are fish nights at my house. 🙂 And tonight, with a hungry husband working hard outside, I knew that dinner had to be satisfying, hearty, and quick!! Enter a garlic cod recipe that someone from work shared with me. (Warning: If you don’t like garlic, stay away from this one).
- 1 lb cod
- 1/2 tablespoon butter
- 1 tablespoon olive oil
- 1/2 cup bread crumbs (I used garlic and herb seasoned bread crumbs)
- 3 garlic cloves
- dash salt
- dash pepper
- tablespoon parsley
- 1 egg, scrambled
Sautee the garlic in butter and olive oil until it is tender. Mix in the bread crumbs, salt, pepper, and parsley. Dip the cod in the egg and then in the crumb mixture. Place in a baking pan that has been coated with nonstick cooking spray and bake at 400 degrees for 15 minutes (or until it flakes easily).
The orange vegetable you see in the picture might look like a cheesy cauliflower, but it’s actually a Fiestaflower! 🙂 I never even knew that such a vegetable existed. It tastes exactly like cauliflower, but it’s orange. My husband picked it up when he was shopping the other day, and I was actually excited to see the oddly colored cauliflower. Without it, I would have served a dinner that consisted of white rice, white cod, and white cauliflower. Oops! (My sister is shaking her head right now and thinking, “Nicole, you wouldn’t have that problem if you served brown rice, which is healthier). 😉 Maybe next week!!!!
Oh, and can I just say that I am addicted to beets??? Sooo good!
I managed to drink my six glasses of water today, so the challenge continues. Kristen @ Change of Pace had a great suggestion that I invest in a cute water bottle as an extra incentive, and I am so going to do that!! What a great idea!
