Pancake of the Month – Gingerbread Pancakes

This holiday season, I haven’t been able to get enough gingerbread.  Gingerbread cookies.  Gingerbread biscotti.  Gingerbread latte’s.  And now, gingerbread pancakes… 🙂   The pancakes are super easy to make, come out light and fluffy, and have the unmistakable taste of molasses, cinnamon, and allspice.  Hmmm, gingerbread for breakfast.  Now that’s Christmas morning perfection (or a cozy breakfast-for-dinner meal to serve to your hubby and sister, which is what I did last night).  🙂

Gingerbread Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons molasses
  • 1 tablespoon canola oil

Directions

  • In a large bowl, combine the first six ingredients. Combine the egg, milk, molasses and oil; stir into dry ingredients just until moistened.
  • Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. (These pancakes don’t bubble as much as most pancake recipes I’ve tried, so don’t let the lack of bubbles fool you.  A few bubbles might mean you’re ready to flip).  Cook until the second side is golden brown.
  •  Yield: 3 servings.

    Yum–and your picture makes them look soooo inviting. Unfortunately, all I’m having for breakfast today is a kind of watery cup of coffee. As soon as I get off work for the holidays I will have to start having real breakfasts, like this one!
